The meal opens with a special Rosé Sauvage Cocktail with a dash of orange bitters and liqueur paired with a refreshing Tuna Crudo with heirloom tomatoes, Hass avocado and Calabrian chili pesto. Piper-Heidsieck Brut is a welcomed dry counterpart to the second course: a rich quattro formaggio Fiocchi with spiced pear; followed by Braised Angus Beef Short Ribs that bring out the fruity, spicy notes in Piper’s Rosé Sauvage.
A final course of vanilla Panna Cotta with spiced apples and amaretti crumble is paired with the sultry sweetness of Piper-Heidsieck Cuvée Sublime, however diners looking for a fifth indulgence need not look far. To add to this tantalizing experience, The Tuck Room Tavern is offering diners the option to treat themselves to an additional three-ounce pour of Piper-Heidsieck Rare for $20.
