Chef Le Tohic has traveled across the globe to the Black Sea coast of Bulgaria to visit one of the world's oldest and most renowned purveyors of luxury, sustainably-farmed caviar, for an in depth immersion into the production and harvesting of this iconic ingredient. Inspired by all he learned and well equipped with a variety of caviar straight from the source, he has designed a very special menu that caters to lovers of caviar and novices alike.
