I would be negligent if I didn't mention Centeno's banana cream pie, which may be the best in Los Angeles at the moment. Forget what you know about the genre: This is a cloud of banana-flavored cream heaped onto caramel-coated wisps of pie crust, a dessert that gives the impression of ultimate richness but is actually rather light. It is a pastry tour de force.

First time at the restaurant tonight, and we ordered the seared foie gras (among other things). While the components were imagianative and thrilling, the foie gras itself was tremendously over cooked. We were so filled by that point, but the waiter insisted we try the chicken and waffle dish as a replacement. What he presented to us, compliments of the chef, was the waffle dish with one of the largest, creamiest, and best prepared pieces of seared foie I've ever had. My god, that man knows what he's doing. We shared forkfuls with the customers around us after they witnessed our initial shock and subsequent ravings. Josef better put that option on the menu soon, or he may be dealing with a lot of foie additions on his hands. Thank you Chef!

Human, your response shows only how successful the PETA gang and their hangers-on have been at brainwashing the populace. How hard do you think those farmers have to work to round up the ducks and geese they're "forcing" food on? Not much - just let'em know it's chow time and they come pushing and shoving to be next in line. It's the French farmers who nailed the birds' feet down who were the idiots; had they known how to do the feeding as it's done nowadays, they'd never have had to use force.

Such subtleties are lost on your average gotta-look-good politician, and on too many civilians as well. Obviously.

Ah, the late Midwestern food historian Marcia Adams was doing shrubs in 1997. The River Cottage in the UK has been doing them at least since 2008.

LA chefs are getting to be like New York chefs (e.g. "We've found this great new ingredient called Sriracha sauce, which never existed before we noticed it!"), which is depressing.
