A:Miloukia, the name of a Middle Eastern herb as well as the soup made out of the herb, is the Egyptian equivalent of garlicky okra gumbo: thick, dense and viscous, with a distinctly mucusoid texture that is either off-putting or heaven itself, depending on your proclivities. Certain adepts are supposedly able to prepare the soup in a way that minimizes this slipperiness, but I can’t say that I have ever dined with any. Anyway, big bowls of miloukia are available as a Saturday special at Wahib’s Middle East Restaurant. The stuff has got to be healthy, just got to be . . . Wahib’s, 910 E.
